Vinegar, commonly used in the composition of oil and vinegar salad dressings or marinades, appears to activate genes that help combat the accumulation of body fat and weight gain, according to a Japanese study published in Journal of Agricultural and Food Chemistry.

Previous research has indicated that the main chemical of vinegar, acetic acid, may help control blood pressure, sugar level in blood (thereby combating diabetes) and fat accumulation.

The recent study suggests that vinegar could help them lose weight. Tomoo Kondo and his colleagues gave acetic acid or water to mice through a stomach tube. Mice all had a diet high in fat they normally ate.

Those who received the vinegar have accumulated 10% less body fat than those who received water. The amount of food consumed by mice was not affected.

Laboratory experiments conducted by the research team suggest that acetic acid could activate the genes that produce proteins involved in fat breakdown.

Of health benefits have been attributed to the vinegar for many years. Apple cider vinegar, in particular, has been considered effective in treating a variety of problems and weight loss.

Although some of these allegations have proved unfounded, some seem to have some validity, the researchers believe. Research has so far been made with too small groups of participants to be successful and should continue.

The researchers point out that vinegar is acidic and should be diluted in a liquid before being eaten. The acidity of vinegar can erode including tooth enamel. A long-term use may decrease potassium levels, which can be problematic for some people.
